Lunch for old times

When I was a kid, my mother used to make me "sandwich au four" or oven sandwiches. They were open faced american cheese, bacon and tomato sandwiches that cooked in the oven for 45 minutes. The bread was super crispy, and the cheese was all melty. The bacon would be chewy and the tomatoes juicy. But I am not a big fan of overly crispy bread or chewy bacon. So I'm going to try updating this with pan fried bacon, then I'll use a higher temp, maybe 350 or 375 and cook the sandwiches for less time - something like 10-15 minutes. Hm, I'm excited to try. I'll update with a recipe and perhaps a picture.
